Chili Cook-Off Winner

La Vida Java Coffee Company and Micro-Roastery Award Winning White Chili
Serves 4
 
Marinade:
4 cups strongly brewed La Vida Java Afro Cubano coffee
4 chopped sundried tomatoes
1 New Mexico or California dried chili pepper (with or without seeds)
2 cloves garlic, minced
4 TBSP chopped red onion
1 TBSP Worcestershire sauce
1 TBSP hot sauce
1 TBSP cayenne pepper
1 dash ea salt and pepper
 
Chili:
1 TBSP Olive Oil
1 lb boneless, skinless chicken breast, cut into cubes
½ cup chopped onion
1 cup chicken broth
1 can (4-oz) chopped green chiles
1 tsp garlic powder
1 tsp ground cumin
½ tsp oregano leaves
½ tsp fresh cilantro
¼ teaspoon ground red pepper
1 can (19 oz) white kidney beans (cannelloni)

Marinate the chicken in the coffee marinade in the refrigerator 2-12 hours, stirring occasionally. Heat olive oil in a large saucepan over medium-high heat. Add chicken; cook 4 to 5 minutes. Remove chicken, cover and keep warm.
 
Add the onions, garlic and the Anaheim chili pepper (this is a mild pepper) to the pot. Saute the onions until they wilt. After the onions have wilted, add the marinade and all the other ingredients to the pot, except the chicken and kidney beans (and optional garnishes). Adjust the amount of chilies you put into the mixture. If you like spicy chili, add the seeds. If not, delete the seeds.  
 
Simmer for 30 minutes. Then add chicken and kidney beans. Simmer 10 minutes and serve in bowls with optional garnish.
